A note to congratulate you on last night – an excellent evening with a first class menu, a delightful venue and your most interesting presentations on Cava.
Taught me a lot about Cava – I had no idea about the times it spends ‘ageing’ and the fact that 95% of it comes from Catalunya.
Hope that that if they do eventually separate from Spain, they will not put the ‘export’ prices up!

Hi Colin,
It was a lovely evening …one of the best, if not the best,  we’ve had with you.  The cavas, the food, the ambiance…delightful .. The only problem was we couldn’t see you because we were behind a pillar.. perhaps you preferred it that way!   None of us really thought about going to Swiss Hotel for dinner,  but we will now… Thanks for a super evening

Hi Colin,
well, you certainly exceeded all expectations last night with the cava and food pairing at the wonderful Swiss Moraira hotel last night. We’re all used to your tastings being fun, informative and friendly but last night was the best of all. The presence of Sr. Bonet from DO Cava was a surprise. You must have really impressed him to persuade him to travel all the way from Barcelona to be present at your tasting. What a charming man and how kind of his organisation to sponsor the evening – your fame has obviously spread far and wide! Four superb dishes prepared by the talented chefs at the hotel, brilliantly matched with four fantastic examples of the finest cava and all in fine surroundings together with an attentive and appreciative audience, we thoroughly enjoyed the whole evening, very many thanks. I’m afraid it’s now a case of ‘follow that’ but, knowing you, you will.
